Ingredients
32 ounces, Carnation Evaporated Milk
6 ounces, Butter or margarine
4.5 lbs Sugar, granulated
2 tsp, Salt
1 lb, Marshmallows, miniature
3 lbs, Nestle Semi-Sweet Chocolate Morsels
2 tsp, Vanilla Extract
12 ounces, Walnuts Chopped

200 one-inch pieces in a two half sheet pans
Combine butter, Evaporated Milk, sugar and salt in heavy saucepan
Heat to boiling over medium heat; boil 10 minutes, stirring constantly
Remove from heat. Stir in marshmallows, morsels, vanilla and nuts.
Stir vigorously until marshmallows are completely melted.
Pour 5 pounds fudge into 2 half sheet pans; allow to cool. Cut into 1-inch squares. Serve.
Libby's Pumpkin Pie

Ingredients
10 1/2 cup Nestle Carnation Evaporated Milk
106 oz Libby's 100% Pure Pumpkin
3 Eggs
5 1/4 cup Granulated supgar
3 1/2 tsp. Table salt
2 Tbsp. Cinnamon, ground
1 Tbsp, Cloves, ground
8 Pie crusts, unbaked (8-9 inch)
Libby's Pumpkin Pie
Prep: Preheat conventional oven 350F. Makes 8 pies.
In a 20-quart mixing bowl, combine eggs and Libby's 100% Pure Pumpkin until blended.
Combine sugar, salt, and spices. Add to pumpkin mixture and mix well.
Ad Nestle Carnation Evaporated Milk gradually; mix until smooth.
Fill each pie shell with about 3 2/3 cups of pumpkin mixture.
Bake for 55-65 minutes or until set. Cool completely before cutting.
For 72 mini muffins, prepare as above, filling muffin cups 3/4 full. Bake 15-17 minutes.

1 1/4 cup Nestle Carnation Evaporated Milk
1 tsp. Libby's 100% Pure Pumpkin
1 1/4 cup Water
1/2 cup Butter
2 tsp. Salt
1 cup Cornmeal
3 Eggs, separated
1 tsp, Pumpkin Pie Spice
Pumpkin Spoonbread
Prep: Preheat conventional oven 350F. Grease and flour loaf pan.
In a pot over medium high heat, bring evaporated milk, water, butter, and salt to a simmer.
Slowly whisk in cornmeal a little at a time until smooth.
Add Libby's 100% Pure Pumpkin, egg yolks, and pumpkin pie spice. Mix well.
Whisk egg whites to a soft peak, and fold in the pumpkin cornmeal mix slowly.
Pour batter into a loaf pan, and bake at 350F for 30-40 minutes or until done.
